​To make 👇🏼:
Dice one yellow onion and saute on medium heat until translucent. Add 3 cloves of minced garlic and a 1 inch chunk of minced ginger, for about 2 minutes. Add veg of choice- I went with broccoli, cabbage + red peppers but usually add ribboned carrot and mushrooms as well. Add 1/2 block of diced tofu, diced. Saute for about 5 minutes, then add 1 can of coconut milk, 3 cups of vegetable broth, 1 tsp turmeric + 2.5 tbsp of curry powder (to taste). Simmer over low heat for 10-15 minutes. Meanwhile, cook noodles of your choice (I added buckwheat to this, but rice noodles are great too!). Add 1 tbsp of soy sauce + a small splash of rice vinegar (optional) + enjoy!

I season it with cajun before going in the oven and then filled the wraps with lettuce, tomato, carrot, cucumber, ranch, & daiya. ALSO here’s a hack for you- the burgers and strips are the same price, but you get 100 grams more of product in the burger bag! Also, the IndianLife tortillas from @blushlane are by far the best store-bought tortillas I’ve found 😍

CHIPS DE KALE 
Tengo que comer KALE, pero la verdad es que crudo no me gusta ! Así que cuando consigo compro si o si . Lo lavo con agua bien fría y revive, luego aparto las hojas del tallo y las acomodo en placa para horno , lo rocio con aceite de oliva ( que tengo en un envase con rociador ) , le pongo sal marina de molinillo por encima , ralladura de limón y al horno moderado por 9/10 minutos . Cuidarlos que no se pongan color marrón , que conserven su flor verde . Quedan sequitos y crocantes . Les pueden poner otro condimento o lo que gusten , pimienta, ajo ... a mi me encantan !
