INGREDIENTS
1 pound chicken breasts cut into 1'' pieces
2 tablespoons olive oil
1 teaspoon Italian seasoning
1/4 teaspoon crushed pepper optional
salt and pepper to taste
3-4 cloves  #garlic minced
1/2 cup  #tomatoes chopped
2 cups broccoli florets
2 cups baby  #spinach
1/2 cup shredded cheese mozzarella, cheddar, parmesan, or favorite melting cheese
4 oz cream cheese

INSTRUCTIONS
Heat 2 tablespoons olive oil in a large saucepan over medium-high heat. Add the chopped chicken breasts, season with Italian  #seasoning, crushed red pepper, and salt & pepper. Sautee for 4-5 minutes or until chicken is golden and cooked through. 
Add the garlic and saute for another minute or until fragrant. Add the tomato, broccoli, spinach, shredded cheese, and cream cheese. Cook for another 3-4 minutes or until the  #broccoli is cooked through.

Serve with cooked  #pasta,  #rice,  #zucchini noodles or  #cauliflower rice.

INGREDIENTS
1 lb fingerling potatoes, halved 
1 tablespoon olive oil 
Salt and pepper
Parsley for garnish 
FOR THE AIOLI:
1/3 cup @followyourheart mayo
1 tablespoon apple cider vineger 
1/4 teaspoon paprika 
1/2 teaspoon garlic powder 
1/4 teaspoon oregano 
1/2 teaspoon ketchup 
1/4 teaspoon chipotle powder 
1/8 teaspoon salt

1. Toss potatoes with salt, pepper and olive oil. Place face down on a baking tray lined with parchment paper and bake on 400° for 20-25 minutes until deep golden brown and crispy.

2. Meanwhile combine the aioli ingredients in a bowl. Allow potatoes to cook slightly, garnish, then DEVOUR.

🥔Ingredients

1/4-1/3 cup olive oil

6 large cloves of garlic finely chopped or minced

1 1/2 teaspoons salt

1 teaspoon dried parsley

1 teaspoon dried thyme

1 teaspoon dried oregano

½ teaspoon fresh cracked black pepper

3/4 cup fresh grated Parmesan cheese

3 pounds (1.5 kgs) red potatoes, washed and quartered

1/2 cup unsalted butter

4 tablespoons fresh parsley, finely chopped (for serving)

🥔Instructions

Preheat the oven to 400ºF (200°C). Grease a large baking sheet with non-stick spray or olive oil. Set aside.

In a bowl, combine 1/4 cup of olive oil, garlic, salt, herbs, pepper and parmesan cheese together, mixing to combine. Add the remaining oil if the parmesan cheese has absorbed most of it. 
Toss potatoes through the mixture to evenly coat.

🥔Melt 1/2 cup of butter in a small pot or skillet over medium heat. Stir the butter continuously and swirl the pan occasionally to allow the butter to cook evenly and prevent too much splattering. 
When it begins to foam, the colour will change from yellow to tan to a rich golden brown colour. As soon as you smell a nutty aroma, take the pan off the heat. Give it a light mix with a wooden spoon to lift up any browned bits on the base of your pan and pour over the roasted potatoes.

Those are the tofu noodles 🍜(yes noodles made of tofu) that I made last week for me and @fadwak_. I basically got a bag of tofu noodles from lulu hypermarket. On the noodles, I added some beans, Chickpeas, yellow peppers, mushrooms, garlic and onions! I had the veggies sauted with a dash of salt before hand. You can go crazy with the veggies... The more, the happier you will be 😉! Anyways for flavoring I mixed some soya sauce, Dijon mustard, siriracha, ginger paste, and sweet&sour sauce. Just pour the sauce on top and let them simmer together for a bit, again feel free to alter the sauces used to suit your preferences, and there you have it another proof that veganism isn't boring and is full of flavors🥑

🌸🌸🌸🌸🌸🌸🌸🌸🌸🌸🌸 INGREDIENTS:⠀ 2 (6 oz) salmon fillets⠀
4 small potatoes⠀
1 cup green beans⠀
Olive oil⠀
1 lemon⠀
1 small bunch parsley⠀
1 small bunch dill⠀
Sea salt flakes⠀
Pepper⠀
2 small tomatoes on the vine⠀
⠀
🐟STEPS:⠀
Preheat oven to 425 degrees.⠀
Lightly oil a large sheet pan. Finely slice the potatoes and trim the beans. Rub them lightly with olive oil. Season with salt and pepper. Chop 3 thin slices of lemon.⠀
Place one salmon fillet, skin side down, on the chopping board. Season with salt, then lay the dill and parsley on top, followed by the lemon slices. Put the second fillet, skin side up, on top. Secure with a few pieces of cooking twine. Place in the middle of the baking sheet. Arrange the beans, potato slices, and tomatoes around the fish. Squeeze lemon on the fish.⠀

Cook for 15 to 20 minutes until the fish is cooked through. Turn the vegetables halfway through, if needed. Leave to stand for 5 minutes, then remove the twine and use a sharp knife to slice lengthwise through the salmon. Serve with the roasted vegetables.⠀
