Nebbiolo, I love this grape variety and especially when it is from Barolo appellation ! Did you know that the #nebbiolo owes its name to the Italian term nebbia, which means fog, like the morning fog found in this region #barolo has long been produced according to the traditional method. Which is, with a maceration that can last from 30 to 50 days, followed by a long ageing in large neutral barrels. A process that forces consumers to wait several years before they can enjoy their wine. In the 1980s, the modernists arrived in the region by producing their wines in a way that consumers could enjoy the wine immediately. It is produce with a much shorter maceration and it age in barrels, which give the wine a rounder style. This has led to a division between the traditionalists and modernists. I do prefer the traditional style where I have to wait several years to enjoy the wine, which will make the moment of opening the bottle, an even more special one ! We might ruffle someone's feathers here but there’s more to Sauvignon Blanc than New Zealand.
The Kiwis do make the boldest of them (and nothing wrong with that) but if you’re into milder Sauvignons, head to France (Sancerre) or northern Italy.
Sauvignon Blanc is light in body and very fresh, so pair it with fish such as sole, trout and sea bass. As an option for vegetarians we suggest asparagus and hummus or soft cheeses like goat's cheese which pairs fantastic with this grape variety.
