If you don’t already know, I am a big believer in prepping my meals for the work week ahead. Sometimes I do a full meal prep (breakfast, lunch & snacks), other times I meal prep for a few days ahead. Sometimes I do fancy breakfasts and lunches, other times it’s simple yogurt + fruit for breakfast and veggies + beans + grains for lunch. It just depends on how much time I have on the weekend. Either way I make sure, I have prepped some meals for the work week ahead. Yesterday, I meal prepped all my breakfasts and lunches and for the work week ahead. These meals are for two people and took me two hours to prepare (So, that’s two hours I will save during my busy work week)😊

So, why do I meal prep? 4 simple reasons:
✅ I know exactly what I am eating and I know it’s healthier than most take away foods; #nutritious
✅ I save at least $50-100 a week from not buying take away foods for breakfast/lunch/snack; #savings
✅ I reduce food wastage! Who else has wilted veggies at the back of the fridge at the end of the week and end up throwing out a stack of veggies or food that’s gone off?!? #wastefree and
✅ I am less likely to snack on the biscuits and crackers in the office kitchen as I have had a proper breakfast/lunch and I have brought in my own ‘healthy’ snack for when I am feeling peckish 😀

Meals for the week ahead:
Breakfast - blueberry banana smoothie, yogurt + berries + seeds bowl, carrot cake overnight oats
Lunch - salad with balsamic vinaigrette + chickpeas + homemade chicken snitzel, stir fried cabbage + sesame soy tofu + baked sweet potato, @slendier noodles with lemon vinaigrette + steamed broccoli + boiled eggs
Snacks (not pictured) - power cookies, fruit, @yoproau yogurt

I was experimenting with new recipes last Saturday and this AMAZING cakes came out SAAAAAH GOOD 👌🏽! Swipe left to check out the consistency 🤤 I had two serves for morning tea with a cuppa and it was just PERRRRRFECT! 🍰☕

Each square has 95 cals and 7gr of protein 👌🏽 so here it goes:
.
Ingredients:
🍊 1/2 cup (65g) of coconut flour
🍊 1/2 cup of unsweetened almond milk
🍊 1/3 cup of @queenfinefoods sugar free maple syrup
🍊 2 eggs
🍊 2 @pureggandlifeplus egg whites
🍊 1 tsp of baking powder
🍊 2 oranges, juiced
🍊 1 scoop (30g) of @happywayau vegan vanilla protein powder
.
Note: if you don't have protein powder, it can be substituted with almond meal/flour and stevia or your sweetener of choice. Macros will change if this is the case.
.
Method:
1.  Pre heat your oven at 180c
2.  Mix everything (if the mixture is too thick, add a little bit more milk)
3.  Pour the mix into a baking tray
4.  Bake for 35-40 minutes
.
Note: you can add some orange zest for more aroma.. 🍊😍
.
The whole recipe is 750cals, 56C, 20F, 57P. Portion it as you like. I cut into 8 pieces and they are just perfect 👌🏽

Save this recipe and make it as soon as you get a chance coz I promise you it's delicious! I'm planning on making it again this week 🤤🤤

People always think it is troublesome to eat healthy but the trick is to choose the right ingredients.
I used to find it tough to balance work with my gym regime and I always try to eat before 9pm. So when I cook, I will find the fastest way to prep my meals and still keep to my dietary selections.

For this dish, I used @fortunefoodmfgsg ‘s egg tofu with Chinese spinach known as phuay leng in hokkien (a Chinese dialect) is associated with prosperity because of the red roots, it is also full of vitamins.
I added wolf berries for extra nutrition and that natural sweetness. 
All done under 15 mins!

Buongiorno ragazzi e buon inizio settimana ❣️ oggi vi propongo una ricetta molto semplice e veloce ma allo stesso stesso tempo ricca di sapori e bontà 😋.
Ho utilizzato ingredienti reperibili anche in altri negozi / siti perciò voi potete adattarvi come più preferite alle vostre esigenze.
CHEESECAKE di avena con crema alle bacche di acai, goji e melograno 🍒🤤

INGREDIENTI:
- 40 gr di fiocchi d'avena;
- 120 ml di acqua o latte a vostra preferenza 💧.
- 100 gr di yogurt greco s.l;
- 3 gr di polvere di bacche di #acai;
- 10 gr di bacche di #goji 🍓;
- Chicchi di melograno (la quantità a vostra scelta);
- Topping a piacere ☺

PROCEDIMENTO:
Per prima cosa mescolate i fiocchi d'avena con l'acqua oppure il latte e scaldate in una casseruola come un semplice porridge (per chi desidera al microonde a 900watt per 1' ☺).
Fatto questo a parte ho frullato lo yogurt con le bacche di goji e la polvere di bacche di acai creando un composto privo di grumi (il sapore è eccezionale). Ma ora arriva il bello 🤤 per chi desidera un sapore aggiunto può aggiungere anche del succo di melograno da renderlo più rosso (come ho fatto io 😍).
Riporre in frigo ed il giorno successivo ho messo i topping restanti 😋 mousse al cioccolato 🍫 MIX NUT BUTTER e cacaonibs 🥰❤
Ora scappo a ripetere alcune cose, allenarmi e lavoro ☀

This garden fresh corn salad features sweet corn from @abbies_food is bursting with fresh-from-the-garden goodness, including fresh herbs,crisp cucumbers , radish,carrots, ripe juicy garden tomatoes, olives from @abbies_food and boiled egg 💃👌🥚🕺 Created a simple salad that only has a few ingredients, but enough flavor to steal the show..! 💃 Adding olives from @abbies_food in your salad is a great source of dietary fiber, which keeps the stomach full.. Olives are also loaded with vitamin E, iron, copper and disease fighting antioxidants 💪
How to prepare it 🕺
In a large bowl Take 2 cups of sweet corn kernels @abbies_food
Take chopped cucumbers, radish,carrots, tomato, and olives.. Mix them well.. Add 2 tsp of olive oil, salt, black pepper and mix herbs and lemon juice.. Toss to combine.. And it's done.. Add some boiled egg 😀

One Pan Pasta with Tempeh & Shrooms ( #vegan )

Hi! Feeling hungry? How about Creamy COCONUT MILK Pasta with TEMPEH & SHROOMS? I made this recently and the taste is soooo good. Hands down the best ever #homemade flavours....and its:
- #plantbased
- #eggfree
- #dairyfree
- #nutfree
- #lowwaste

I have re used the leftover penne and vegetables to create this dish w/o compromising on the flavours. ( No to #foodwaste ) This creamy delish pasta is totally my favourite recipe of #veganuary and light on the pocket. What do ya need to #cook this? Head down to the deets for the recipe.

Deets #whatsonmyplate A one pan homecooked pasta with herby goodness and deliciousness. Ingredients:
-Whole Shiitakes or any shrooms
-1/4 block tempeh cut into squares
- bowl of pasta
-1/4 inch live turmeric
-1/2 onion, 3 cloves garlic minced
-2 tbsp #nutritionalyeast
-4 tbsp coconut milk
- pinch of salt n pepper
- 1 tbsp tomato puree
-1/4 tbsp chilli paste
- mixed herbs, italian seasoning
- generous olive oil
- veggies

Method:
1. Boil the pasta per instructions. set it aside.
2. Heat up pan with olive oil and brown the tempeh n shrooms. Add salt n pepper with seasonings n herbs. Set it aside.
3. Slice your veggies, add salt n pepper and saute with olive oil, onions garlic , turmeric. Set it aside.
4. Add chilli paste n tomato puree and olive oil in a pan. Mix it until a fragrant aroma comes out. Add coconut milk, nutritional yeast and salt n.pepper and mix it well.
5 Add the tempeh, shrooms into pan. Mix it well.
6. Add the pasta and mix it altogether with the sauce. Taste n adjust accordingly.
