Lunch today: Chicken pulau, raita, papad & pickle #blukitchen #glutenfree

got home from boston yesterday and was right back in the kitchen today! I threw together this spicy chickpea & tofu veggie farro bowl for a quick meal that would also be a perfect packed lunch or easy dinner! recipe below

spicy chickpea & tofu veggie farro (makes 2 servings)
- 1 cup cooked farro
- 2 garlic cloves, peeled & minced
- 1 small zucchini, sliced & quartered
- 1/2 small red onion, diced
- 1 small sweet potato, peeled & cubed
- 1 block extra firm tofu, drained & pressed
- 1 can chickpeas, drained & rinsed
- 1 tablespoon chili powder
- 1 teaspoon oregano
- 1 teaspoon cumin
- 1-2 teaspoons sambal oelek (more or less as desired)
- Salt & pepper, to taste
- 1/4 cup hummus (more or less as desired)
- Olive oil

1. preheat oven to 425 degrees F and line a baking sheet with parchment
2. place cubed sweet potato and tofu on baking sheet and drizzle everything with olive oil, salt & pepper. bake for 25-30 minutes or until everything is lightly browned and just crisp
3. while sweet potato & tofu roasts, add olive oil to a large non-stick sauté pan over medium-low heat and drizzle with olive oil. place garlic in and sauté for 30 seconds to one minute. add onion, zucchini, chickpeas, chili powder, oregano, cumin, salt & pepper and sauté for 5-7 minutes or until just tender
4. add roasted tofu & sweet potatoes to the pan with the veggies then sambal oelek and toss for a minute or two so all the flavors marinate then spoon over cooked farro. top with hummus & enjoy! .

I came across these @morningstarfarms veggie burgers on Pinterest and thought they looked pretty good! I'll be honest I think I only had a veggie burger once in my life and I wasn't too sure about it. I saw this brand in my local @freshcogrocery and it was on sale so decided I would give it a try. Okay you heard it from me and it was actually super delicious and it tasted like chicken!! Even my husband really liked it and he loves his beef burgers lol. ~Pesto Stuffed Gnocci~
Call me a Traitor (pun intended, I’m the actual worst 🤦🏻‍♂️), but I kept the @traderjoes cauliflower gnocchi in the freezer today and reached for the stuffed gnocchi (stuffed with sauce and cheese!) 🤪 I love a no fuss lunch that I can dress up with a few pantry staples, like the Trader Joe’s kale cashew pesto 🙏🏻 Sometimes my days are just too dang busy to make elaborate lunches, so these quick meals need to suffice 🔥 This came together in 15 minutes and was soooo tasty, 10/10 recommend 👏🏻

▶️ Baked stuffed @traderjoes gnocchi (I baked at 450 for 10 minutes and then upped heat to broil for another 5 to get color) + tossed in kale cashew pesto @traderjoes + a little parm + a handful of hemp seeds for some more protein + red pepper flakes 🔥

3 Tbsps clarified butter or ghee, melted
4 fresh garlic cloves, finely chopped
3 Tbsps raw Honey
2 Tbsps apple cider vinegar
sea salt and fresh ground black pepper to taste, about 1/4 teaspoon each 
2 Tbsps fresh chopped parsley

Instructions:

In a medium glass bowl, whisk melted butter/ghee, garlic, vinegar and honey. Add in the chicken tenders and sprinkle with sea salt and pepper. 
Toss/stir until all tenders are nicely coated.

Allow to sit and marinate flavors for 5-10 minutes.

Heat olive oil in a large skillet over medium heat. 
Add chicken tenders in a single layer to the pan and cook until golden brown on both sides, about 8 minutes total. 
You might need to cook these chicken tenders in two batches to avoid overcrowding the pan, which prevents that nice golden brown color.

Sprinkle with fresh chopped parsley and enjoy! 💚

Overnight Chia Oats topped with super sweet raspberries!! 😍

Ingredients:
🔷1/2 cup oats
🔷1/2 cup almond milk (I used @califiafarms vanilla unsweetened)
🔷1/2 cup yogurt (I used @nancysyogurt probiotic whole milk, use plant-based yogurt for #dairyfree #vegan option)
🔷1 tbsp chia seeds

Mix all ingredients and put in the fridge! These weren’t technically “overnight” because I ate them 2 hours after mixing 🤣 Top with whatever you want and enjoy ✨ Hope everyone is having a good Tuesday! 😍😍

Pinch salt⠀
3 Tbsp orange zest⠀
1/2 cup coconut sugar⠀
1/2 cup chopped @theochocolate Orange 70% Dark Chocolate⠀
1 Tbsp melted coconut oil⠀
2/3 cup freshly squeezed OJ⠀
2 eggs⠀
1 tsp vanilla extract⠀
1/4 cup unsweetened nut milk ⠀
⠀
Combine flours, salt and baking powder in one bowl.⠀
In another bowl, massage zest and coconut sugar together to infuse the flavor. Then add eggs, extract, OJ, coconut oil, and nut milk with a whisk.⠀
Fold dry into wet, then fold chopped chocolate bar; save some for top garnish.⠀
Bake at 375F for 20-22 mins, till toothpick comes out clean. Let cool. Devour!⠀

This is super easy to whip together. Today I used some Josie’s arugula, fresh watercress, sliced cucumber (they are in there somewhere), diced avocado, fresh jalapeño peppers, added some shrimp and tossed it in the tahini sauce. A nice light + refreshing summer salad that keeps the mind + muscles happy.

Here is how I made it:
.
1.Start with some wild deveined shrimp and toss with some olive oil, sea salt, fresh pepper, garlic powder, a little paprika. Experiment & have fun with what you like though. Mix everything well & let sit.
.
2.Take a large pan and add 1 or 2 tablespoons olive oil + 1 tbsp minced garlic. After a few seconds, add the shrimp and cook for about 1-1.5 minutes on each side. Don’t overcook as it turns rubbery. Set aside.
.
3.In a large bowl, add your greens + veggies. I used a big base of arugula and added fresh watercress, 🥑, sliced jalapeños (deseed these if you dont like it super spicy), some cucumbers. You can add anything you have on hand.
.
4.Next is the dressing. I used 2 tablespoons high quality velvety tahini, 1 tablespoon olive oil, juice from 1/2 large lemon, sea salt, 1 tsp freshly minced garlic, and about 1 tablespoon of finely chipped fresh cilantro. Mix everything together, then taste. You’ll have to add more tahini/oil/lemon/salt/herbs based on your preference if you’d like. Everyone is a bit different.

5.Add the shrimp, add your desired amount of dressing, and mix everything well. I then topped with some sesame seeds. You can also use hemp seeds or anything else you fancy.

Ecco perché ho creato la mia versione PROTEICA E SENZA ZUCCHERI AGGIUNTI!!
.
Ingredienti:
100gr yogurt di soia
10gr di crema “YUMMY CHOCO CREAM” della @cobaltnutrition
1 bustina di dietor
5 nocciole intere per l’interno
1 cucchiaio di olio di cocco
1 cucchiaino di gomma di xantano
.
Per la farcitura:
Olio di cocco
Cacao amaro
Granella di nocciole
1 bustina di dietor
.
In una ciotola mescolare tutti gli ingredienti per creare l’interno avendo cura di aggiungere olio di cocco e gomma di xantano alla fine.
.
Quando l’impasto risulterà denso sarà pronto per essere lavorato: creare delle palline con all’interno la nocciola e metterle in freezer per un oretta.
.
Preparate la farcitura: mescolate 20gr di olio di cocco con 20 gr di cacao amaro e dolcificante e un cucchiaio di granella di nocciole.
Immergere le palline e ponetele di nuovo in freezer per un altra mezz’ora.

Since I discovered @cutdacarb a couple of weeks ago my head has been overflowing with recipe ideas! This is one of the first that came to mind and it was even more delicious than I dreamed! 𝑳𝒐𝒘 𝑪𝒂𝒓𝒃 𝑪𝒂𝒖𝒍𝒊𝒇𝒍𝒐𝒘𝒆𝒓 𝑪𝒉𝒆𝒅𝒅𝒂𝒓 𝑷𝒆𝒓𝒐𝒈𝒊𝒆𝒔! They totally taste like the real deal!! 💯

I started with 2 1/2 Cut Da Carb Flatbreads and cut out 15 4” circles; then I cooked and mashed Alexia White Cheddar Riced Cauliflower (tastes *just* like mashed potatoes!) and put a spoonful into the center of each circle.* I moistened the edge of half the circle with a little warm water and folded the circle in half creating a half moon. I have a little dumpling making tool that folds and presses the edges together but if you don’t, use a fork. Then I gave them a quick pan fry to crisp them up. Because all the ingredients are cooked, it just takes a minute or two on each side before they’re ready. I served mine with a dollop of sour cream (you can use ff or full fat or even greek yogurt, whatever your preference) they come out to be 1 #smartpoints each. If you like potato perogies you have to try these!!

Since I discovered @cutdacarb a couple of weeks ago my head has been overflowing with recipe ideas! This is one of the first that came to mind and it was even more delicious than I dreamed! A few weeks ago, I finally bought some popsicle molds and I put all my favorite smoothie flavors into them. This one was my favorite!! Ingredients:

1.5 to 2 Frozen Bananas (peel removed and cut into chunks before freezing)
1 Cup Frozen Pineapple Chunks
1.5 Cups Unsweetened Almond Milk

1.Place ingredients into a @nutribullet or high speed blender. 
2. Blend until creamy. 
3. Fill popsicle molds and freeze for several hours or overnight.

🌶 Add some "PEP" to your step and use a pepper instead of bread! 🌶 I stuffed mine with some tuna salad and guacamole. It is a bit messy but I had a lot of fun eating it. 😚 Bell peppers work great for this, just make sure to choose a chubby one..as opposed to a long and skinny one. 😜 I am in Vermont this weekend and tomorrow I am so excited to go to the Burlington Farmer's Market @bfmvermont . This is one of the top farmer's markets in America..and as someone who basically worships food..this is a big day for me. :) If you live in Vermont, lemme know which vendors I should visit. 🌶 Add some "PEP" to your step and use a pepper instead of bread! 🌶 I stuffed mine with some tuna salad and guacamole. dEATS: On a foil-lined sheet pan, toss a container of organic grape tomatoes in a drizzle of EVOO + @primalpalate Adobo seasoning. Bake them at 400F for 15-20 mins, then flip for 20 more to get them nice and roasted. At the same time, roast cauliflower florets, tossed in EVOO + @primalpalate Adobo seasoning for about the same time, switching tray placement in the oven with the tomatoes halfway when you flip them.
In a pot, cook @wholefoods 365 brand of organic super grains (made up of white and red quinoa, millet and buckwheat) according to package instructions.
Sauté some organic baby spinach for your greens. Add some @wholefoods organic drained and rinsed chickpeas. Drizzle with an easy mixture of tahini and lemon juice and a drizzle of EVOO. #healthbyshortstack
