Only a couple of weeks until my most favourite day of the year, #pancakeday. It’s quite late this year as it is not until early March.
My youngest son is a pancake fiend and I make them most weeks. I have been using golden wholegrain flour to up his the fibre intake and he actually prefers them. He normally starts with a cheese pancake, then maple syrup and finishes up with lemon sugar. Not sure that’s the concept of a balanced meal though 🤣🤣🤣. Flour gifted by @marriagesflour when I popped in to bake with them.
We had a few of my son's friends over yesterday as they were out of school for President's day. It was midday and I didn't want to cook a full meal, so I decided a loaf of bread would do. It was teenage boys who aren't really into anything healthy, so I settled on @kingarthurflour honey-oatmeal sandwich bread. It has some #wholegrain , but mostly feels like a white bread. The boys loved it! Loved it so much that when it was cool enough to slice and I called them down, it was gone in under 5 minutes. I think it would have been 2 minutes, but they had to take the time to butter the bread. It was like the Nascar of eating💨.
Here's how I make the loaf:
11/4 cups boiling water
1 cup old fashioned oats
2 tablespoons butter
1/4 cup honey
Combine ingredients and let cool. This is essentially cooking the oatmeal.
Next add in:
1 cup whole wheat flour, I used white
1 2/3 cups unbleached all purpose flour
1/4 nonfat dry milk
2 teaspoons instant yeast
Mix well into you have a soft, smooth dough. Mine took about 6 minutes. Cover bowl and let it rise until doubled. Form into loaf and place in greased 9x5 pan. Or free form on a baking sheet. I used a sloppy braid 😬. Perfection isn't always the best thing, right Let this rise. Towards the end of the rise, preheat oven to 350. I egg washed the top of mine and sprinkled on some oats. Bake about 40 minutes. Remove from oven and cool in pan about 5 minutes. Cool on rack about 10 minutes, it makes it easier to slice. I also made honey butter to go with it. My recipe is about 1/4 cup softened butter and 2 tablespoons honey. You can also add cinnamon and brown sugar of you want it to be more like Texas Roadhouse butter! .

Weekend’s batter stretched to breakfast with some filter coffee.
Recipe on the blog for quinoa Adai, substitute with any millet or amaranth. I also added adzuki beans in the mix. Although it is traditionally made with rice, I love the hearty and healthy quinoa. So good every way.

Crumb Shot of our Field Blend (whole wheat, rye & white flour)! We started experimenting with this gorgeous white flour from Hoffnung Mill in Gorrie, ON and have had great results. We only use white flour for this loaf and we wanted to use the best! Side Note: Hoffnung Mill has no phone, and we have to get in contact with them via fax machine at the local post office 😭
