CHILES RELLENOS EN NOGADA👅I’m gonna try to make this as easy as possible. But first what the F$ck is that weird ingredient? HUITLACOCHE (Corn smut) is a fungus that grows on corn, considered a delicacy in Mexico 🇲🇽 where cooks use it to flavor food. They are delicious & have a smoky and earthy flavor, with a taste similar to mushrooms mixed with corn. Moving on, grill your peppers (I’m using poblano peppers), when the peppers are almost blackened, place them in a plastic bag, seal, and allow the peppers to steam as they cool. Once cool, remove the skins. Meanwhile cook your huitlachoche, minced garlic, red onions, mushrooms, red jalapeño, green and purple epazote (a herb used in Mexican cuisine with a very unique taste) or your favorite herb, seasoned with salt, lime juice, cumin, paprika, dry oregano, and pepper. Pour the vegan crema I’ve made in the past like 50x 😂😅(cashew or sesame seeds based) or your favorite crema. Pero primero, ¿qué chinga%os es ese ingrediente extraño? HUITLACOCHE es un hongo que crece en el maíz, y en muchas partes de Mexico 🇲🇽cocineros lo usan para dar sabor a los alimentos. Son deliciosos y tienen un sabor ahumado y terroso, con un sabor similar a los hongos mezclados con maíz. Bueno lo que sigue, cuando los pimientos estén casi quemaditos, colócalos en una bolsa de plástico, sella y deja que los pimientos se cuezan al vapor mientras se enfrían. Una vez que se enfríen, remueve las pieles. Mientras tanto, cocina el huitlachoche, ajo picado, cebolla morada, champiñones, jalapeño rojo, epazote verde y morado (una hierba utilizada en la cocina mexicana con un sabor único) o tu hierba favorita, sazona con sal, jugo de limón, comino, paprika, orégano y pimienta. Cubre tus chiles con una crema vegana esta la hecho como 50 veces😂😅 (a base de nuez de la india o ajonjolí) o tu crema favorita. Después , agregue la salsa de chipotle restante y las zanahorias ralladas y cocine durante 3-5 minutos. Tercero, agregue sus verduras cocidas a sus tortillas con un poco de la mezcla fresca de tomate/cilantro/jugo de lima. Mango guacamole black bean spicy pineapple habanero tostadas with marinated red onions 🥑 SIMPLE AND DELICIOUS 🤤! First lets chop and add a big red onion into a bowl with the juice of 10 limes! The longer it marinates the softer and more juicy the onion will be. To make our mango guacamole: mix 2 medium avocados, 2 small roma tomatoes, handful of cilantro, and 2 small mangoes. Cuanto más marine, más suave y más jugosa será la cebolla. Para hacer nuestro guacamole de mango: mezcle 2 aguacates medianos, 2 tomates pequeños, un puñado de cilantro y 2 mangos pequeños. Para la salsa de piña con habanero: licué 150gr de piña, el jugo de la mitad de una toronja, 2 dientes de ajo, una pizca de orégano, 1/4 cucharadita paprika, 1-2 cucharadas de aceite de oliva, 1/2 a 1 pimiento de habanero, una pizca de comino, sal y pimienta al gusto. I’m using “Green jackfruit in brine from Trader Joe’s” (1 container). First remove and squeeze the excess water! In a pan add the jackfruit, red bell peppers, broccoli, squash, onions, and jalapeños or whatever veggies you enjoy 😉. I seasoned mine with nutritional yeast around 20grams, cayenne pepper, garlic powder, paprika, lime juice 1 or 2, tablespoon of tamari sauce, and 1/2 cup water. Cook until veggies are tender then add the last ingredient: melted peanut butter around 30grams and stir for 1-2 mins. Enjoy in tortillas, lettuce or by itself! 🙌🏻 if you can’t find jackfruit, try with oyster mushrooms, soy curls, or just veggies! ➖➖➖➖➖➖➖➖➖➖➖➖➖➖➖➖➖➖➖➖➖➖➖➖➖➖➖➖➖➖➖➖➖➖➖➖➖➖Envolturas de 🥬 Agridulces con Yaka! Yo utilice “Green jackfruit in brine de Trader Joe's” (1 contenedor). Primero retire el agua y luego exprima el exceso de agua! En un sartén agrega la yaka, los pimientos, el brócoli, la calabaza, las cebollas y los jalapeños o cualquier otro vegetal que disfrutes 😉. Condimenté mi guisado con levadura nutricional (alrededor de 20 gramos), pimienta de cayena, ajo en polvo, paprika, jugo de limón 1 o 2, una cucharada de salsa tamari y 1/2 taza de agua.
