Really enjoying San Francisco a Food Biography a Big City food biography series written by Erica Peters @Erica peters cofounder and director of the Culinary Historians of Northern California and edited by food historian Ken Albala @kenalbala 
A look a San Francisco food history from indigenous roots through Spanish Colonial, Mexican and on into 19th and 20th century. 
Food history is always more than just about food itself and this book tells a much bigger story than just that of San Francisco.

Just listed on the website: Barely used forged carbon steel French chef knife marked Bridge Company in NY a restaurant supply house in NYC started in 1946.

This knife is barely used and had a dull first edge with some light rust when found, it has been cleaned and a fresh edge put on. The blade in the heel is very thick and tough, like a cleaver, the second tip half is much thinner. 
While the somewhat generic markings don't give much of a clue to the date the style of manufacture does. This knife was hand forged on a old 19th century style "martinet" trip hammer after having the general form especially the integral bolster and ferrule drop forged in.

The steep taper from the thickest part of the blade to the tip and the taper at the heel are only possible with hand forging and the integral ferrule/bolster a drop forged feature. Drop forging was late to be adopted in Thiers, it sped up production but the old forging techniques were kept going for quite some time.

After forging the knife was hand ground on a water stone grinder and finished by hand on leather coated wooden wheels, this hand grinding allowed for convexity on the sides of the blade and thin edges when desired. This hand finished grinding still goes on in the workshops of Thiers although the old style water wheels have been replaced with modern mechanical grinding.

Happy birthday Kelly!

Seeing as there was a nice pre-polish on the Mutsumi Hinoura shirogami nakiri it just made sense to show the finish of one of our natrual stones.
This one (no.269) is a semi soft Shoubudani (approx lv 3.5) that is a super fast cutting medium kasumi finisher. Many of these Shoubudani koppa we select are somewhat soft and are great for finishing knives that benefit from some bite. The ones with these little black spots “goma” are often very fast as well.
This one has a great full size at 231x68x28mm and 1006.5 grams, a super easy shape to sharpen knives on.

First in the sequence is the Arashiyama 6000 a mixed grit stone that leaves a bitey edge and a hazy polish, a great finish for high alloy steels and stainless that benefit from more bite. Insanely cheap for the performance....
Jinko aoto a very muddy stone made with a mix of natural aoto powder and synthetic grit and binder, wet it finishes like a coarse 2000 but when this mud is worked more thoroughly and allowed to dry it gets much finer, something like 4000 tops. See the two photos of the finish to compare.
Last in the progression is the Dragon GB stone, a classic old style muddy synthetic 800, lots of grit that leaves somewhat shallow scratches, great for wide surfaces like big kireba grinds or single bevel.
