#Whole30 Day 8: Flavour bomb alert! Peanut free chicken satay on coarsely 'riced' cauliflower with zucchini and sweeeeeet roast pumpkin. I love this dish because it's got sweet, salty, umami and spicy all in one. How to: Brown 6 chicken drumsticks (or your preferred cut of the bird) in coconut oil. Add half a head of chopped garlic, one small jar of cashew, almond OR macadamia butter (I used cashew tonight), and two small cans of Ayam coconut cream. Simmer, stir to combine, let drumsticks cook through. Add a dash of coconut aminos of you have it on hand, or just season well with sea salt. Throw in a large diced zucchini at the end, simmer a little longer until zucchini is al dente ('to the tooth', ie. cooked, but still has crunch). This thick, rich sauce pairs perfectly with, "I can't believe it's not rice" cauliflower and roast pumpkin (the sweetness of pumpkin replaces the sugar that's usually in original satay recipes). I sprinkle homemade chilli flakes on mine. #Whole30 Day 5 Dinner: Bolognese on sweet potato mash, kohlrabi greens from my garden sautΓ©ed in broth and ghee, smashed avocado with cracked pepper and sea salt. I dolloped some extra ghee on top after the photo. One big bowl of YUM. The bolognese is made from Cleaver's organic beef, I've added some minced liver and kidney for an extra nutritious boost, and thrown in whatever veges I had at the bottom of the fridge (carrot, celery, mushroom, capsicum). Whole 30 Mayo -Approx 1.5 cups olive oil (maybe more) -3 egg yolks (use the whites in your next omelette or to bind grated potato to make rostis) -1 teaspoon dijon mustard (macro brand from Woolies) -Pinch sea salt (optional) -1/2 to 1 lemon, juiced OR tblsp of apple cider vinegar Instructions: Place yolks, mustard, salt and lemon juice/vinegar in your stick blender cup. Blitz thoroughly. While the stick blender is running, slowly drizzle in the olive oil. It's ready when the mayo is very thick. If it's too runny you haven't used enough oil. Taste it.
